Kimchi Start Up Duo

Hello,

I'm looking to start selling Kimchi to the wider public with my sister out here in Ontario, Canada. I'm hoping that experienced users here on this board will be able to help us troubleshoot any fermentation problems that we may encounter!

Currently we are considering starting out selling at farmer's markets.

I haven't yet figured out all the rules and regulations behind selling fermented products so I don't know if I need to use a commercial kitchen and approved public safety inspected fermentation space...
I'm looking to contact someone on the government side of things soon, because the regulations are not clear to me and I need some guidance.

At any rate, the objective is to start small with a rate of perhaps 5 gallons of kimchi sold by biweekly?
