How to make really alcoholic bevarage from milk?

I use kefir grain, they produce tiny bit of alcohol, what to do to make really alcoholic drink?

And when there is lots of alcohol, can i make milk vinegar from it?

Lactose doesn't ferment well so the recipes I've seen for milk-wines (koumiss) require an enzymatic change of those sugar molecules or starting with expensive lactose-free milk. Would be pretty low alcohol without added sugar/honey.

What if I would use kefir grains, make it really strong, slowly add sugar, really max alcohol that way and than let it on the air for milk vinegar? :D
