Hello I am trying to make hishio condiment with the barley rice koji I have left over. The problem is I can't find the recipe I used. I am trying to remember the percentage of rice, veggie and soy sauce.
Also I was wondering if anyone ever made nama shoyu with other beans instead of soy beans. It seems my co op or any co op in my location simply do not have organic soy beans. There isn't even any nonorganic soy beans (I suspect because of gmo effected it too badly). Thanks
