Removing Kraut from a Harsch crock

I grew a lot of Cabbage this year so decided to buy a nice 20 liter Harsch crock. So I have Sandor's book and the book that came with the crock, but neither as far as I could find, talks about removing some sauerkraut and then replacing the stones and resetting the lid in the waterseal. Is there any concern about kahm forming after you break the water seal remove kraut and reset it?

This is going to be an issue with ANY fermenting vessel. Just be sure your hands are clean, only keep the lid open as long as necessary, and maybe avoid opening the vessel in a drafty environment.
