i have a fresno mash going in my dry cabinet with a 2%salt to weight ratio and processed fresnos. a layer of seeds setttled to the bottom and are now "milky". what causes this?
Lacto-fermenting vegetables typically produces a fluffy/slimy white precipitate that settles on the produce and the bottom of the fermenting vessel. My guess without more description is that it's just that.
