Help!! White things on pepper ferment!

Postby Ajax on Fri Sep 29, 2017 1:17 pm

I am fermenting green Tabasco peppers, using a method from a Mother Earth News article. I don't see any bubbling, and it's been fermenting for 8 days. But what I do see are white things floating on top. Some are curly, most are straight. Could this be something from the pepper seeds? I did use green/unripe ones. Any help is greatly appreciated!

My guess is that a few cut open seeds are in the batch and those little white things are the embryo, or at least the embryonic root. To assure yourself, you could carefully cut open a couple of pepper seeds to investigate what the insides of a pepper seed look like. To me, they look like what is floating on your ferment. ;)
