Gluten-free kishk?

Is it possible to make kishk with some other grain instead of bulgur - like rice, or buckwheat? I think buckwheat would be yummy. I have neither made nor eaten kishk, but as it is the only cold cereal Nourishing Traditions recommends . . . I would like to give it a try.

I have never made kishk, but you may consider using buckwheat. It is gluten free and I think it tastes better than bulgur. It's a bit sweeter. Or maybe millet? Not sure how that would turn out. I think buckwheat would be a suitable substitution. The only way to know for sure is to try it out.

I haven't heard of Kishk...could you tell me more about it? I am trying
to learn all I can about gluten free alternatives to help my family with their systemic yeast issues.
