Ogi !!! - African Millet Porridge

Just made my first batch of Ogi (African Millet Porridge). So easy and so delicious! I've been making Oat Porridges for years and am pretty much in love with them, but I gotta admit, I think I've got a serious crush on Millet! ;)

I let it ferment for about 2 days before cooking up the first serving

I headed Sandor's advice and made it savory for my first serving ...hmm hmm hmm :)

Ghee
garlic
salt, pepper, and nutritional yeast
after mixing the above, I topped it with a dollop of yogurt mixed with a little cucumber, onion, mint, and just a splash of lemon juice

The next day, I made it sweet:

Cinnamon
Ginger
Salt
Agave

I tried lots more variations over the course of the week. As the Ogi becomes progressively more sour, it opens up boundless flavor combinations. Experiment! Have fun! You truly cannot mess up this African delight!!

Colins right, it's great stuff. I made it today for lunch for myself and five others and it was a hit. I let it ferment for a week and stirred it once a day. By itself I thought it was lacking something so I made a side of garbonzo beans with cumin, salt, and olive oil that went really well with it. Ogi is a new favorite here.
