Mystery white goop on top of soaking grits

first time poster :)

I soaked organic corn grits in deep water and a breathable cover for about 10 hours. The soak water had a small amount of salt and apple cider vinegar--maybe that is where i went wrong :) Some white goop appeared on top of the grits (still deep under the water). Looks like a tablespoon of yogurt. Any idea what the white goop is? sorry i did not photograph!
