Fruit Vinegars?

I'm starting a fruit vinegar today as I had a ton of lemons and limes (so I'm making a lemon-lime vinegar to try it out - it sounds like it would be good on summer salads!)

Anything that really HASN'T worked for anyone?

I am such a fan of apple vinegar because it tastes sweet and not really that much sour for comfort.

I have not tried lemon vinegar yet but I guess I would have to give it a try as well. I fancy them on garden salads couple with olive oil.

The last time I experimented with a recipe included vinegar and cheese, which turned out to taste quite well.
