Also, I've seen the DVD with the Sandor Katz workshop. Are there any other workshop out there on dvd or online for purchase especially geared towards a small business?

It looks like a metal canning (also called wide mouth) funnel. You can find them on Amazon, maybe at local restaurant supply stores also.

I saw something very similar or the same as that on Amazon a few days back. Stainless steel funnels. There are different types available, some have strainers, some longish spouts like conventional funnels and others have short spouts with a wide neck. I guess it depends upon what you need.
