Douglas fir syrup fermenting....

Hi all....

I have a question regarding some douglas fir maceration trials. I've got 3 macerations on the go, one cold soak with sugar and needles/stalks and then 2 macerations where I boiled the needles, one just with water and the addition of sugar once it had cooled and one where I boiled sugar/needles/water all together.

My 2 heated macerations are looking normal but my cold soak started fermenting and now has some funky white mold on the top. Obviously the boiling of the needles with the other 2 killed off any yeast present, hence the fermentation. Any advice on what to do with the cold soak? It smells very aromatic compared to the other 2 macerations, so I'd like to salvage it if possible.
