Coconut Milk Kefir questions

Hi.
I'm attempting to make coconut milk and am referencing the "Wild Fermentation" book - copyright 2003, page 89 referencing milk kefir grains where it states, "These grains can be rinsed and soaked in water, then switched to other nutritive liquids". Since I don't see where it shows how long to soak the grains, how long should I soak them before adding to coconut milk? Also, how often should I stir the coconut milk or shake the jar? How long should I let it ferment? How will I know when it's ready?

What are your experiences?
