Dehydrating ferments?

I'm redoing our survival/preparedness/ditch bags, and working on making new/interesting meals. I'm wondering if anyone knows if drying live ferments (like kraut, or carrots, or onions) would result in still-live probiotics once rehydrated?

I know kefir grains dehydrate very well but take a little extra time to "wake up".

I imagine the bacteria in sauerkraut are similar.

Thanks so much! I do dehydrate kefir grains, so I'm familiar with the "wake up" thing. I just wasn't sure if the lactobacillus were as forgiving as the kefir beasties.
