I have made ginger bug soda a couple of times. this time i wanted to try adding ginger bug to fruit juice. I made a gallon of tea, added my fruit juice concentrate and 1 cup of ginger bug.
I let that sit on the counter with a towel on the top. The next day i got thick layer (1/4" layer) of what looks like yeast growing on top and it has a strong alcohol smell. So, i'd like to know if i should continue this batch? should i harvest the yeast? Am i brewing something i didn't intend on....or should i chuck it and start over?
