Help with my ginger ale

Hey guys,

I've been very successful in the past making ginger ale using the Wellness Mama's recipe: https://wellnessmama.com/8945/ginger-ale/
However, the last 4 times I tried did not work AT ALL! I'm wondering if someone can help me troubleshoot? I'm using the same recipe and same method, so I'm not sure why it's not working.

I had a very active and bubbly ginger bug (recipe also by the Wellness Mama: https://wellnessmama.com/8942/ginger-bug/).
I made the wort as described by the recipe, added 1/2 cup of the ginger bug (for 2 quarts of ginger tea) and let it bulk ferment for 36 hours at around 78F. NO BUBBLES, NO FIZZ, NO FERMENTATION ACTIVITY!!!

I added another 1/2 cup of ginger bug and 2 hours later I saw bubbles rising to the top. A few hours later the bubbles had STOPPED COMPLETELY and it was again flat. I decided to wait another 12 hours, but still no activity. I bottled it anyway to see if it would develop any fizz, but nothing.

I have no idea what's going wrong! The ginger bug was active, so why didn't it ferment? The ginger that I used was not organic, could that be the problem?
