Hello,

I tried making Smerka this summer with six Juniper berries I picked up from my local Bulk Barn. The white yeast developed around them after about a month but having checked the bottle at two months none of the colour has changed and the beverage tastes like stale water. Any advise for a second attempt would be greatly appreciated.

Turns out that a 1/4 cup of Juniper berries per 2L seems to do the trick!

In Sandor's "art of fermentation" book he recommends 1 cup juniper berries per 2liters water. I've got this going right now it smells heavenly already! He says to ferment for a month, less in hot weather.
