Wild fermented. I bottle after about a week. Using the same process for fruit from the garden both the ginger and Berry ferments 'explode' after being refrigerated. I can't understand why this happens? Is it likely to be continued fermentation while refrigerated or something else that could be harmful? Thanks

See our tonic-beverages board for more detail, but quickly, yes -- fermentation continues at a much slower rate in the fridge. When I'm making ginger beer, I leave it out on the counter until my test bottle (plastic) gets quite hard and then move it to the fridge. So long as I drink them within a week or two, it's all good. I've never had a bottle literally explode, though I know it happens, I have painted the ceiling by mistake when opening a too-fermented brew. Refrigerating also normally makes them safer, as I understand it, because it increases the amount of CO2 that the solution wants to hold.

Having a plastic bottle as a test sample is quite engenious, Christopher. I've already learned a lot, I feel like. Oh, and hello from me too. haha
