Can I seal mason jars for the duration of vegetable ferment?

Postby Woodmouse on Thu Jan 10, 2019 9:30 am

Hello Friends

I have used many different airlock and weight systems to maintain anaerobic conditions during vegetable ferments

Recently, I have simply filled quart mason jars with the salted goods and screwed the band lid on tightly to seal. Only burping them when my wife insists.

Do I have to burp the jars? Will they really explode? I feel like they can tolerate the pressure. Has anyone had a properly sealed jar actually explode? I wonder what is the max pressure (PSI or kPa) generated by fermentation?

Thanks

Scott, you should ask this in one of the subject-boards instead of here. Most users won't read it here.
