Howdy, All--
I've been a vegetable fermenter for a few years now (sauerkraut, kimchi, brussel sprouts, etc.) as well as a lot of yogurt and some kefir.
More recently, I've been diving into tempeh. I've made about 10 batches--8 successful, and two major fails. Most of it so far has been regular soy, but I've also made black soybean, and red quinoa, and I have a green mung bean-purple barley mix just heading into the incubator.
I became aware of tempeh discussions on this forum through Arthur Dent's astute comments on the FullOfPlants website. (Thanks, Dent Arthur Dent!)
In addition to the chance to chat and expand my education, my most immediate goal is to ask Durgan what they mean by lining tempeh containers with cotton. Like tea towel fabric? Or cotton balls? Or what. I can't quite sort it out, but I'd like to know...
