Hello, I'm Juan, a culinary instructor in Colombia.
I'm have been fermenting from home since the pandemic started.
Most of what I have learned is from my own experience and would like to learn much more from all you guys.
I have made my own vinegars, sauerkrout, cheese, dry age meat, sausages, fermentes sweet chilli sauce among other projects.
Just this week I started to grow koji on some rice, but that just left me with more questions than answers.
