Lemon balm, pineapple sage and apples this is what I have in abundance at the moment. The apples are not 100% ripe but must be harvested before the birds do.
- Is there any wine I could make with pineapple sage? Or is it a good ingredient with apples?
- Wine with lemon balm leaves or are they better mixed with apples?
- How many rose petals would you use for rose petal wine, I have a jar full of dried ones too?
- With the more delicate flavours do you use white sugar instead of brown one?
- The organic store here sells unsweetened cocoa nibbles, I would like to experiment with that too, any ideas?
- I have got an old book first steps in wine making (which is a great one) which suggests making wine with tea leavings, it that a good one? Should I add some spices?
