Same Batch ACV Split Into Two Jars....Huh?

I need help understanding what happened here; My wife made apple pie with some Fuji and Gala apples, so that day 2-15-17 I made some ACV. Took two 1/2 gallon Mason jars and duplicated the recipe for each. Water, apple cores and peels and sugar. Put a coffee filter over the top and secured with a ring. Stirred once after a week then after three weeks 3-8-17 strained them into quart jars, reused the coffee filter covers. One batch seemed lighter in color than the other, but both smelled the same. Now they look like the pictures attached. The darker batch is still fermenting, bubbles visibly rising from sediment in the bottom while the lighter one seems inactive. Did the lighter one go bad, or possibly finish fermenting earlier? Thanks

Tasted them both a week or so ago, kinda nervous to taste the lighter one... Think it's safe to taste?
