hi guys,

i have been trying to make banana vinegar from peels and overripe fruits. i tried the wid fermentation technique, means putting them into and open clay pot, pooring sugar and water over and covering it with a cloth.

but the problem: after a week, the surface of the liquid of was quite moldy.

so my question is how i can i avoid this? by pushing bananas and peels totally under water with a heavy weight, or using a different pot, or any other idea?

Keeping your produce under the water line and away from air can only be a good thing. It won't stop mold completely, but you can just scoop it out each day if you see any forming.
