Why boil the sweentener?

Hi,

I am fairly new to Soda making using the ginger bug.

What is the point of boiling the sweetener (fruit and sugar)? Wouldn't it be much more beneficial to have "raw" soda?

I have made one batch with raw grapes and a little bit of cane sugar and it came out ok.
