apple cider vinegar from juice + cider

Postby emily.p on Tue Dec 25, 2012 2:11 pm

Hi everyone,

Sorry in advance if this is a repeat post - my browser won't let me see all the search results when I query the forum (?).

I have on hand a bottle of nice acv and a carton of (pasteurized) apple juice. I was wondering what would happen if I added some vinegar to the juice and let it sit for a while.

1) Would this transform all the juice into acv?

2) If I grew a healthy mother first and then added that to the juice, would it eat up the sugars in the juice? I have some kombucha and other ferment experience but this is my first foray into cider vinegar.

3) Would it help if I added some chopped apple bits into the juice?

Any insight would be great!

Thanks,
Emily

I've never brewed vinegar, but if I were looking to use yeast to ferment this into alcohol, the thing that I'd be looking at is what preservatives are in your juice that might kill the yeast. I imagine vinegar mother will be as sensitive. What is in the juice?

Hi,

Just apple juice from concentrate and water, no preservatives or colorants.
