yes, you can definitely ferment frozen juice. last fall i bought some cider from a local farm, and a couple of the jugs had been frozen from the previous years' harvest (i wanted a particular apple to balance the sweet and tarts). i just mixed up the different juices in gallon glass jars with wide mouths, stirred a few times a day until i saw fermentation, and then racked into a glass carboy with airlock. after the primary fermentation had mostly ended, i decided to split it up into multiple half-gallon batches, adding different herbs or some honey to make cyser. i recently bottled it all, and have to say the cyser is so far my favorite.
