Alcoholic Ginger Beer Problems

Hello! I am fairly new to the ginger beer thing, and I've made a few batches of non-alcoholic beer and a few batches of low-alcohol beer (about 3%). I am open fermenting a batch and was trying to get the alcohol above 3%, but now the alcohol seems to have disappeared? I'm not sure what I did wrong, or what to do now (besides have a delicious non-alc drink). I'm thinking that I may have left it out for too long? Any help would be appreciated!
