Flavoring Yogurt

I have been working on my yogurt making techniques for more than a year now and I finally have a system that works. So much so that I have started to flavor the milk to get different types.
I wanted a coffee flavored yogurt so I was using strong brewed concentrate then I was cold brewing coffee to add to the milk. The first challenge was that the yogurt ended up thinner. I then moved to steep the grounds (reg or decaf) in the milk for about 6 hrs. It is the same method for cold brewing coffee using water.
This worked great and the mixture was not watered down.
But now the issue is that the culture is not growing very well or the growth is retarded in some way.
If anyone has some information why this might be I would appreciate the help.
p.s. I have also been doing a chai yogurt that works great! ...somehow the coffee properties create a different reaction.
