Looking for Viili with Geotrichum candidum

Hi everyone,

I've been on the hunt for Viili that grows the velvety layer of mold on top. Does anyone have a culture like this or know where I can find one?

It is my understanding that the velvety texture comes from Geotrichum candidum. I already have a ropey (GEM cultures) and non-ropey (CulturesForHealth) version of viili but I would really like to find this molded variety. Any suggestions?

I found a culture with a very thin layer of fuzz last year. Tastes like Geotrichum candidum and comes from the UP of Michigan.

Did you have any success finding viili?

I don't know if this is the right one, but the viili culture I got from wells of health grows a lightly fuzzy mould. It's not unlike the texture you find on the outside of bree, but different smell and taste.

The mould I get may not be the culture, but because my house is cold and things take ages to set, 24 hours is usual for a viili or fil mjolk, instead of the 10 to 12 hours most people seem to have.

Maybe you could message them and see if it's the right viili.

Just be careful with these sellers, I recommend them, but I also recommend you be careful with them. The first batch of Viili I got from them didn't set, so I contacted them as per their instructions, and after long going back and forth, they sent a replacement culture (which worked just fine). However, they won't send replacements unless you contact them before doing anything they consider foolish like putting it in the fridge. Their replacement policy is very strict, but spelt out in their instructions and on their online shop. That said, I am well pleased with the quality of their products.
