Perforate stainless steel for making tempeh?

Hi,

I'm looking for a way to make tempeh without any plastic.
I was thinking of maybe using two (one for covering) perforated stainless steel pans like this one: http://www.amazon.com/Browne-Foodservic ... 000UBEF0K/

Has anyone tried something like this? do you think this would work? would the size of the holes be a problem?
Is it even safe to ferment tempeh using stainless steel, or it may release some chemicals into the tempeh?

Another option I thought of, is using perforated glass/pyrex pans (since glass never releases anything as far as I know), but I have no idea if such thing even exists, let alone where to get one. If anyone knows about something like this, I'd love to know!
