I started making tempeh at home a number of weeks ago, but am having some issues. When it comes out right, it is awesome, but about 1/3 of the time it is an inedible mess.

The previous batch I made was soggy / stinky / slimy. I tossed it. I assumed that I had not dried my beans well enough, so I tried again, and made totally sure they were dry by heating them a little in a pan with no water to evaporate any unnecessary moisture. This time, its been 24 hours, and there is barely any growth at all. When I do it right, at 24 hours I usually have a pretty solid cake.

I'm gonna let this batch go another night, and see if it takes off and finishes, but I suspect its a no-go.

- was my slimy mess the result of too much moisture?
- about how moist should the beans be before I add the starter?
