tempeh problem solving

Postby folkfoods on Thu Aug 05, 2010 11:36 am

hey all,
i am wondering if you can give some guidance around making tempeh.
I think that i am ready, but I also know myself and if (when) it works out well and super yummy, I will want to start making it in large batches for friends. I have a plan for that, except for a good method of drying the beans once they have been cooked. I had an idea that it might make sense to put the cracked, partially cooked beans in a salad spinner to dry them out. any thoughts, could that work?

i am not sure if the beans would hold up in the spinner, or if it would get them dry enough for fermenting, but i thought it might be a good way to efficiently dry a large amount of beans.

could it work?
do you all have any other ideas that might make sense?
thanks!

Sounds like it would work. If you're not cooking the beans completely (not necessary for tempeh since the culture breaks them down really well) I would imagine they'd hold up in the salad spinner. Let us know how it goes.
