Green Barley koji

First time growing koji from spores. Used GEM cultures barley spores and pot barley. Incubated it too long and got green grains instead of lovely white.

What would happen if I used this in miso?

Hoping for a quick reply, miso making day is tomorrow, New Years Day. Thankfully I have back up rice koji, but would love to use barley.

It looks like everyone's out enjoying New Years. Hope you had a good one.

Got another question for you, this one about making your own koji starter. In The Book of Miso, they talk about a traditional method of using whole, dried over sporulated koji grain as a starter instead of spore powder or ground up sporulated koji grain. Anyone ever tried this?

My barley is a very olive green and I worry about using it in my one year miso.

I tried twice to make my koji go into spores, but was unsuccessful. WWFSM, do you remember the exact conditions (temp and humidity) under which it sporulated? I only managed to get a few green spots, most of the rice remained white even after 10 days...
