I ordered brown rice koji from Amazon but after the fact found out that the company I got it from sells several types of koji, one for short term miso, one for long term miso, and the one I got is designed for amazake. I didn't order enough anyway so I will get some of the long term miso variety before I make long term miso, but was wondering if the kind I got is only good for amazake, or if I could try making sweet miso out of it. Also I just ordered the Book of Miso so maybe it will have more helpful information.
