Does food processor stop miso fermentation?

I have friends, Sachi and Travis, who were so impressed and appreciative that I gave them some homemade miso that I easily persuaded them to make some. I gave them a crock setup (I'd switched from one-gallon to two-gallon so I gave them the smaller one) and some koji, as I'd bought more than I needed. They made a 9-month batch and were happy with it except that it's not a smooth paste like store bought miso. I suggested a food processor and Travis said he'd read that using a food processor arrests fermentation, meaning it would not continue to ferment, however slowly, in the fridge. I've been looking and I don't see any data to that effect. Anyone know about this?

use a hand blender to mash it up in it's jar

I've never read anything to that effect and I can't think of a mechanism. I'm sure some microbes are killed in the process, but you'd have to blend the hell out of it to get them all.
