Tempeh is Split Red Lentils, Split Black Lentils, and toasted sunflower kernels. Started with 150 gram of each lentils soaked for 12 hours. Lentils doubled in size. Poured into steamer basket and rinsed. Added 150 grams of sunflower kernels and steamed for 10 minutes in Instant Pot. Mix was spread onto a kitchen towel lined 1/2 sheet pan to dry for 30 minutes, stirring every five minutes. Transferred to large bowl and stirred in 1 tbsp of rice vinegar. Stirred in 1 teaspoon of Raprima tempeh starter. Split the mix into three container, each container held 250 grams. Incubated for 16 hours at 88 degrees F and then turned off incubator. Another 18 hours of incubation until the loaves were removed from the containers and steamed for 20 minutes. Two of the three loaves are shown in the photo.
