Advice for dry spots on tempeh

I have make about half a dozen non-soy tempeh batches in my dehydrator. They are working quite nicely, except for a consistent dry spots on the tempeh. I'd love some thoughts on this--if anyone has experienced and overcome similar issues.

I was having that problem in my home made incubator and realized that my heat was not even.Basically,I've got a bulb with a dimmer to maintain my 88 degrees.To solve that,I suspended a large piece of an aluminum pan below my tempeh rack to disipate the heat and it worked.Now my tempeh is even throughout .Another reason could be poor aeration. Hope that helps.
