My first batch of sauerkraut has turned out really well. I used red cabbage, white cabbage, chopped apple, chopped onion, and some chopped jalapeno. Good fragrance and excellent taste. I'm encouraged to look for other foods to ferment. And thank you Sandor Ellix Katz for your outstanding book.
