Thought about posting a new topic but I think this fits in here-
Can fluctuating temps be problematic? Say you had kraut in a fridge or cellar and then decided you wanted to speed up the ferementation to mature it a bit, could you bring it out of cold storage for a few days/weeks and then put it back in cold storage?
Or in the same respect, lived somewhere that has drastic fluctuations day/night certain times of the year.
