Veggie stache

4 Qts of Salsa
2 Qts of Sauerkraut
1 Qt of Celery, which is chewy
1 Qt of Garlic started
1 Qt of Key Limes started
1 Pint of Blackberries. Might be done, I don't know.

I'm very pleased. Everything is bubbling happily.

Except my water Kefir.
Currently looking at things and pondering about stuff.

Do you like the celery? I've never tried that. Raw, some celery is sweeter than others, so that alone would change the fermentation, I suppose.

I don't have much of a stash right now. About 2 gallons sauerkraut, maybe one liter cauliflower, 1.5 liters sweet banana peppers.

I do like the celery.
The only problem is that they strings are still tough, but the rest is a little softer. I have pretty good teeth, but I can't nip them off. I think the body of the celery is needed to help break them. Fortunately I had cut them fairly short, so once I get them in my mouth they chew up well.
Currently looking at things and pondering about stuff.
