aubergine/eggplant ferment

Hi all

I have fermented aubergines. After a few weeks they are edible and nice but still a bit too hard. I'd ideally prefer them a bit mushier

If I keep fermenting them, would they become softer, or only taste would get affected?

I don't know from experience, but most things get mushier with time.

I had already put the jar in the fridge to stop/slow the fermentation. If I put it out of the fridge again, would normal "not in the fridge" fermentation restart?

I've thought about trying that, but I haven't done it yet.

I would like to know if it works before I risk my small stash...

Well, I'm going to try with a jar of limes I put in the fridge too soon. They are unusable as they are (skins too tough) so I won't really lose anything if they go bad.

My main goal will be to see if the fermentation process starts again.

In fact, I had already put the aubergines out of the fridge. So, I am doing the same experiment. Let's comment back later!

I completely forgot to start them until right now. I have the jar in a bath of 75ºF water for a few minutes, thinking it's best to get them down to fermenting temps as soon as possible.

So far no sign of them begining to ferment. I do have an growth of kalm yeast or something on top. It's not looking good for this test. I might try again with something easier like kraut to see if the general idea is workable.

For these limes, I'm considering pouring off the liquid and rebrining with a backslopping starter.

I'm about to call this a failure.

I'll keep it on the shelf, because it doesn't yet smell like sewage, but I'm pretty sure it's dead. By tomorrow or so I will give it some new starter, but I don't hold out much hope.
