Over Two Year Old Sauerkraut

In the fridge at work, and probably in the garage fridge at home, I have jars of old Sauerkraut I somehow forgot to eat. It lives with the jars of fermented hot sauce I have also neglected.

So today at work, I opened the jar of kraut, and gave it the sniff test.

Smelled.

Like.

Regular.

Sauerkraut.

Doesn't look like anything suspicious is growing in it.

I'm mighty tempted. Good? Way too sour by now? Mushy? Disgusting, or the greatest thing since the fermented pickle?

Would you give it a taste? :)

I am eating my 2.5 year old (last jar I have been saving) right now it is wonderful. Also, just started a 2nd batch 2 weeks ago.

I did the same thing with a jar of kimchi several years ago. It was a little soft, but totally safe, and still yummy. We ate it all.
