Hello, I love garlic sauce but can't find anything on how to make the sauce with fermented garlic. I have about 2kgs of cloves fermenting now and would like to turn the whole crock in to sauce. I had a couple of ideas:
Treat it like fermented chilli sauce where I put the cloves and some brine into a blender and blitz until smooth. My question here is will this be palatable or do I need to blend with other ingredients?
Find a recipe for regular garlic sauce and use fermented garlic instead.
Does anyone have any experience with this?
