Ph meter for hot sauce

I have had great luck with fermenting hot sauces but recently several bottles went sour. It was embarassing because I had brought a dozen sealed bottles into work to sell to coworkers. The ones that weren't refrigerated smelled like bleach and rotten meat after a couple weeks. Not good for sales.

I thought fermentation made hot sauces shelf stable. I do use onion and carrot so I think that is a factor. Also added granulated coconut blossom nectar as a sugar.

So I bought a PH meter to measure my hot sauces.

I calibrated it easily, but when I stuck it in the hot sauce the reading was bouncing all over the place. Are these meters simply not right for checking something so thick?The reading was stable in the water.
