food processor to slice cabbage for SK

My quisinart will slice to 2 mm. Is this thin enough to make saerkraut? I think a shredder would probably be better but my set comes with a medium shredder and the holes appear larger than 2 mm. Any help would be appreciated.

I sometimes cut the cabbage by hand with a sharp knife and sometimes I use a vintage cabbage slicer I found at an auction. Sauerkraut can be on the thin or thick side, it's personal preference. I don't think it makes a big difference to the process. There are some great sauerkraut videos on Youtube and you can see all different styles of kraut making. Check out the guy in Alaska, his is about as chunky as it gets.

I have a quisinart as well and I always use it to make my kimchi. Saves a lot of time and energy. And whatever your preference is as to how thick you like it is fine.
