Disk on top of starter

Postby jen on Mon Jan 05, 2009 9:16 am

I´ve been making sourdough for sometime with good results usually.....recently my starter culture has acquired a dry disk over the top of it when I come to use it.....I´ve mixed it in but it produces thread like lumps.Have I created something strange or is it something more common?

I'm having the same problem. Does anyone have any thoughts on this?

Mine creates a disk if I leave it for more than a couple of days without feeding it or stirring it up. To prevent the "disk" feed and/or stir more often. It doesn't seem to affect my sourdough at all, though. I have stirred it back in when I feed and also just scooped it out with the rest to make a loaf and the flavor has been great. Cheers...
