Hello everyone!
I am really keen to try a cornbread that is soaked/ fermented without wheat flour... all the southern recipies i have seen have some kind of fermented dairy in them, but no fermentation of the batter. Does anyone have this type or recipe?
Or i might experiment...

Rahki, I've made uthapam (thick griddle-cake sort of dosa) using lacto-fermented corn meal. You might try looking at a recipe for dosa or idli as a go by for lightly fermenting the batter before cooking. My experience is the cornmeal takes on a cheesy flavor rather quickly, but this may just be the bugs I have in my area.

I don't know if this is any use to you but since you mentioned avoiding wheat flour, a mixture of rice and millet flour makes a nice base for corn bread and would probably take nicely to fermentation as well.
