Oats ferment, and starter culture questions.

I read that you can ferment oats. I've got various packets of "grain flakes" - quinoa, buckwheat, rice, millet, and rolled oats. I put a small amount of all these 5 flakes types in some water, in a jar, and will leave it at room temperature for a couple of days to see what happens..

I wondered what types of starter culture could be used for this ferment? Are some better or more appropriate than others? Can you add more than one different type of starter culture?

I've got some milk kefir grains. I've read that a dash of that liquid would work, but I wonder - could you add a small amount of the grains themselves, or would they simply die, and thus cause problems?

Would the fermented drink called "rejuvelac" be a good starter for an oat/similar porridge type flakes ferment? If so, I could try a quinoa based rejuvelac ferment. I read so many negative comments surrounding gluten/wheat, that I'm a bit wary using wheat berries!
