Ive been reading the Noma fermentation lab cookbook, and in the koji section they talk about polishing barley grains. However, in the Barley Koji recipe, they just say “pearl barley.” Does this mean that pearl barley is already hulled, or do I need to polish it more? I keep re-reading the whole section and I still don’t feel clear.
